Beef Roasting Times

3 1/2 # sirloin tip roast - 325 for 2 hrs. Served 4 Prime rib 20 mins

 

Bisquick Pizza Crust

2 cup Bisquick
1 1/2 cup Cold water

Mix bisquick and cold water till soft dough forms. Roll or put into 12 inch circle on ungreased cookie sheet. Pinch edge forming 1/2 inch rim. Top with desired ingredients. Bake 425 until crust is golden 20-25 mins.

 

Bread & Butter Pickles - Nixon

8 Cucumbers, Slice don't peel
3 Onions, sliced
1/2 cup Salt
4 cup White vinegar
4 cup Sugar
2 Tbsp Mustard seed
1 tsp Celery seed
1/2 tsp

Slice cumbers and onions and put in a flat pan. Add 1/2 C salt. Cover with ice cubes and let stand 3 hrs. Drain. In a pan put vinegar, sugar, mustard seed, celery seed and turmeric. Bring to simmer do not boil. Add drained cucumbers and onions. Put in jars and seal. Ready to eat in 2 days.

 

Cheeseburger Pie - Beard

1 pkg Crescent rolls
1 # Ground chuck
1 - 8 oz can tomato sauce
1/2 tsp Oregano
1/2 tsp Italian seasoning
1/2 tsp Salt
dash Pepper
Mozzarella Cheese

Spread 1 pkg crescent rolls in 9 x 13 pan to form a crust. Make meat mixture. Brown 1 lb ground beef, drain, stir in one 8 oz can tomato sauce, 1/2 tsp oregano, 1/2 tsp Italian seasoning, 1/2 tsp salt, dash of pepper. Cook 15 mins. Spread on dough, top with mozzarella cheese. Cook 350 till dough is brown.

 

Confectionary Sugar

1 Tbsp Cornstarch
1 cup Regular sugar

Mix above in blender.

 

Corn Fritters

2 tsp Baking powder
2 cup Corn
1/2 cup Flour
1 Tbsp Sugar
2 beaten Eggs
1/2 tsp Salt
pinch Pepper
1/2 cup Milk
1 Tbsp Melted shortening.

Sift dry ingredients, rub in butter and add liquids. Beat well and fry like other fritters in hot fat.

 

Corn Stuffing Balls - Kent

1/2 cup Chopped celery
1/2 cup Chopped onion
1 - 17 oz can cream style corn
4 Tbsp Butter
1/2 tsp Poultry seasoning
1/2 cup Water
1 - 8 oz pkg Herb Season Stuffing Mix
1/8 tsp Pepper
3 slightly Beaten eggs
1/2 cup Butter melted

Cook onions and celery in 4 Tbsp butter till tender. Add corn, water, poultry seasoning and pepper, bring to boil Pour over stuffing mix, toss lightly. Stir in eggs. Shape into 7 or 8 balls or make them smaller. Place in 9 x 13 pan. Pour melted oleo over. Refrigerate if desired then bake 350 for 25 mins. May double recipe and may freeze.

 

Infallible Rice

1 medium Onion minced
2 Tbsp Butter
1 long Grain raw white rice
2 cup Chicken broth, hot

Sauté onion in butter until transparent. Combine onion, rice and hot broth. Bring to boil on top of range. Cover and place in 325 oven for 20 mins. Serves 4 hungry or 6 polite people.

 

Lemon Pancakes - Schramm

5 Eggs beaten - 3 if 1/2
1 tsp Salt
2 cup Milk
1/2 tsp Baking powder
lemon Juice

Use enough flour to make batter that runs like cream, add 1/2 tsp baking powder. Use large fry pan, brown well both sides. Sprinkle with lemon juice and powdered sugar, turn do same to other side, roll in jelly roll fashion and cut in pieces.

 

Low-Cal Spread For Bread And Potatoes

1 pint, Low fat cottage cheese
1/4 cup Water
4 Tbsp Non-fat dry milk
2 pkgs Butter buds
1-3 pkgs Sweet 'n Low

Pour all into blender and blend on low and increase speed until smooth. Then pour/scrape mixture back into cheese container and refrigerate. Only 7 calories per tablespoon.

 

Party Rye Bread

2 lbs Box Velveeta cheese melted
1 lb Ground beef
1 lb Loose sausage
2 tsp Oregano

Brown beef and sausage. Mix melted cheese, add 2 tsp oregano. Mix together. Put on party rye bread. Sprinkle top with grated mozzarella cheese. Bake 10 min 350 - 400. Makes 3 loaves party rye bread.

 

Pizza - Ann Gallo

Use Betty Crocker white bread dough.
1/4 cup Oil
1/2 Onion
1 tsp Oregano or Italian seasoning
2 cans Tomato puree or sauce
shredded mozzarella Cheese
1 tsp Parsley

Raise dough 1 hr. If in hurry after 1 hr spread in pan let rise 15 mins before putting top on. In 1/4 C oil fry onion till brown, 5 mins, add 1 tsp parsley, 1/2 tsp oregano or Italian seasoning and 2 cans tomato puree or sauce. If use puree add water. Cook for 20 mins. Top with shredded mozzarella or cheddar cheese and bake 400 for 15 mins.

 

Pizza Dough

1/2 cup Warm water
2 pkg Yeast
2 1/2 cup Warm water, 2 mins microwave
3 Tbsp Sugar
1 Tbsp Salt
2 Tbsp Shortening
Flour

Mix ingredients adding flour last until dough is the right consistency.

 

Sausage Stuffing for 23# turkey

12 cup Bread
6 Tbsp Milk
3 cup Celery
1 1/2 tsp Salt & pepper
1 1/2 tsp Poultry seasoning
3 Onions
1 1/2 # Sausage

 

 

Spaghetti noodle dough

5 Eggs
2 1/2 cup Flour

Mix and put through machine each no. stopping before last notch.

 

Thaw Method for turkey

Place in original wrap on a tray in refrigerator, allow 2-4 days to thaw or leave bird in wrap, place under cold running water. Allow 6-12 hrs to thaw or Thaw bird in wrap in closed paper bag at room temp. Allow 12 hrs to thaw an 8 - 10 lb bird. 16 hrs for 20 - 25 bird.

 

To Freeze Corn

Corn
Ice Cubes
Saran Wrap
Reynolds Wrap

Cook corn 9 mins. Cool in ice cubes. Wrap in towels to remove excess water and shake. Freeze individually and wrap in saran than Reynolds Wrap. To eat put in cold water 30 mins to thaw. After water boils put in for 2 mins. when it returns to boil.

 

Turkey Gravy

1 Tbsp Butter or oleo
3 Tbsp Flour
1/4 tsp Salt
1 1/2 cup Turkey broth

Melt butter or oleo over low heat, mix in flour and salt. Heat and stir till bubbly. Add broth slowly stirring constantly. Cook over low heat stirring constantly for at least 13 minutes. Serves 6 about 1/4 cup each.

Wash out turkey good, rub with chiffon and salt. If cooking in oven put in pan back down, cover with aluminum foil if not using paper bag. Cook giblets with onion or celery and garlic salt and season salt.

 

White Rice Ring

Rice
2 Tbsp Butter

Cook rice according to pkg directions. Add 2 Tbsp butter to cooked rice and tightly pack into buttered ring mold. Stand in warm place for 10 mins. Invert to platter.
